This takes much longer (often 9 to 12 months) but enhances the flavor of the olives and this traditional method avoids the use of caustic chemicals. All our olives are are biodynamic-organically grown (no pesticides, herbicides, chemicals, GMO) or our certified regenerative farm. These olives are delicious on their own or as part of an antipasto.
